Food Safety Essentials

The Food Temperature Danger Zone is 40°-140°

Chicken must be cooked to 165° and held above 140°

To properly cool-down food it must be put in shallow containers and cooled down to 70° in 2 hours and below 40° in six hours.

Cold food must be held at or below 40°

FIFO (First In, First Out)

is when inventory items are rotated so that the items received or made first are used first ​

Use the closest item to the main door first

Food safety gloves are required when

  • Preparing food

  • Bagging food

  • Preparing desserts & handling ice cream cones

  • Filling ice containers from the ice bin

  • Mixing sweet tea & lemonade

Hairnets are required when

  • Preparing food

  • Mixing sweet tea & lemonade

Proper usage: put on your hairnet, wash your hands, then put on food safety gloves.
