The Food Temperature Danger Zone is 40°-140°
Chicken must be cooked to 165° and held above 140°
To properly cool-down food it must be put in shallow containers and cooled down to 70° in 2 hours and below 40° in six hours.
Cold food must be held at or below 40°
FIFO (First In, First Out)
is when inventory items are rotated so that the items received or made first are used first
Use the closest item to the main door first

Preparing food
Bagging food
Preparing desserts & handling ice cream cones
Filling ice containers from the ice bin
Mixing sweet tea & lemonade
Hairnets are required when
Preparing food
Mixing sweet tea & lemonade
Proper usage: put on your hairnet, wash your hands, then put on food safety gloves.
